One of my favourite meals. Sweet potato and bok choy. So simple and easy to make but also delicious. Throw a bit of cinnamon and/or maple syrup on those mashed sweet potatoes if you like, and maybe some soy sauce on the bok choy if you feel like it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The secret is getting out that there is a whole galaxy of amazing food out there, some of it very elaborate, fancy and complex. And yes, incredibly tasty! But these kinds of simple meals have their place too. They are a no-brainer to prepare, and are extremely healthy. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
